Chipotle-Kissed Red Bean and Sweet Potato Chili

Description

A new twist on the sweet potato.

Ingredients

  • 1 T olive oil
  • 1 onion
  • 1 red bell pepper
  • 4 clv garlic
  • 1 t chili powder (optional)
  • 1 1⁄2 lb sweet potatoes (2 or 3)
  • 14 oz can of crushed tomatoes
  • 15 oz can of dark red kidney beans
  • 1 c water (or less)
  • 1 cn chipotle chilies in adobe sauce (mex aisle of market)

Instructions

Heal oil in large pot over medium heat. Add onion, pepper, garlic.

Cover and cook until soft, 5 minutes. Add sweet potatoes and stir.

Add tomatoes, beans, water, and salt to taste.

Cover and cook on low for an hour (not necessary if you don’t have time.)

When ready to serve, add a couple of chipotles (or the tiniest piece of ONE chipotle finely chopped – very hot otherwise!!)

**Serve with Tofutti vegan sour cream and corn bread. (It’s best the day after.)

Notes

I don't use the chili powder and sometimes just use a spoon of adobe sauce and none of the actual peppers--a tiny kick, nice smoky flavor, perfect!
