Ingredients

Instructions

1 small onion, chopped
1 jalapeno, chopped
4 cloves garlic, chopped
1 Tbs olive oil
1 (15 oz) can kidney beans

4 tortillas
1/2 C cooked brown rice
1 avocado, sliced (optional)
1 tomato, diced
1/4 lb soy cheese
1 C lettuce, shredded
4 Tbs chopped cilantro

Notes

1. Saute the onions, jalapeno, and garlic in olive oil. Add the beans and stir for a minute.

2. Put the bean mixture into a food processor and blend until smooth.

3. Put the tortillas in a skillet with the soy cheese on top to one side. Cook over low heat until the cheese melts, being careful not to burn the tortilla. (This can also be done under a broiler.)

4. Put the tortillas on a plate. Put 2 heaping Tbs of the beans over the cheese, add 2 Tbs of rice, a few slices of avocado, a Tbs of the tomato, a bit of shredded lettuce and a sprinkling of the cilantro. Fold in the sides of the tortilla and roll it up.
